Vanilla, a species of orchid, is a climbing plant with fleshy, oblong leaves. After being pollinated by hand, the flower produces a pod-shaped fruit which is harvested green.
The pods are placed in wicker baskets and immersed in hot water. They are then steamed and dried in the sun. After this they are matured in cases for eight long months until they have turned black and have reached perfect ripeness.
This delicate work takes almost 2 years, with the result that natural vanilla is the second most expensive spice in the world after saffron!

Thanks to the very favourable climate and the growers' skills, Madagascar is the world's leading vanilla producer with an average export production of over 1,400 tons, i.e. 70% to 80% of world production.
